Benefits of Tomatoes and Lycopene
The following comes from the Prostate Cancer Foundation (PCF). Tomatoes are rich in lycopene, which is one of the most well-studied antioxidants in the fight against prostate cancer. Recent research suggests that lycopene may inhibit prostate cancer growth and development of metastases. Cooking tomatoes and consuming them with healthy fats (such as olive oil) increases the body’s ability to absorb lycopene. PCF recommends that men -with or without prostate cancer- consume a healthy diet rich in a variety of vegetables, including cooked tomatoes. It is NOT recommended that men take a separate lycopene supplement.
